Diego Gallegos of The Sollo restaurant surprised everyone with his suggestions. His excellent taste and specializing in in dishes using sturgeon, he is a lover of sustainability and local grown products which make a very interesting cocktail. It is no surprise that his restaurant has a waiting list.
